Horizon：Raw beef dishes around the world

【明報專訊】Do you like sashimi or sushi? Have you ever tried any other raw dishes? Let's take a look at some uncooked beef dishes in the world!

Korea - Yukhoe

Yukhoe(肉膾) is made with sliced or diced raw beef. In the Korean language, 'yuk' means meat and 'hoe' means sashimi. The meat is seasoned with salt, sugar, sesame oil, soy sauce, pear juice, pepper and garlic. It is often served with sliced pear and an egg yolk. When eating yukhoe, mix the egg yolk with the meat and then eat the beef together with the pear. Yukhoe is also used as a topping for bibimbap(韓式拌飯), a Korean dish made with rice.

Ethiopia - Kitfo

Kitfo is a traditional dish in Ethiopia, an African country. It is made with minced raw beef, chili powder, herbs and butter. It is often served with cheese, vegetables or a kind of crispy bread called kocho. During the Ethiopian religious holiday called Meskel, people usually enjoy this dish served on a leaf or a hollow clay plate.

Italy - Beef carpaccio

Beef carpaccio is an Italian appetiser which debuted in 1950. It is a dish of thinly sliced raw beef drizzled with lemon juice and olive oil. It is sometimes seasoned with vinegar, salt, pepper or cheese too. The red dish was named after the painter Vittore Carpaccio(維托雷·卡帕齊奧) who often used red and white in his paintings. Its special characteristic is the thinly sliced meat which requires the knife skills of the chef.
