DIY﹕Chinese tea eggs
【明報專訊】Ingredients
6-8 eggs
3 tablespoons of black tea leaves
1/3 teaspoon of salt
4 cups of water
1 tablespoon of soy sauce
1 tablespoon of black soy sauce
2 pods of star anise(八角)
1 cinnamon stick (optional)
(1) Boil the eggs for 30 minutes.
(2)Take out the eggs and leave them to cool down. Crack the eggs WITHOUT removing the shells.
(3)Add water and all the other ingredients into a large pot and bring to a boil. Put in the eggs and simmer for 2 hours.
(4)Remove the shells and leave the eggs in the soup overnight to give them a richer flavour.
